This is the taco salad I grew up with. My husband claims this isn't real taco salad but he still eats it! I always crave this when the weather first turns warm. This time I made one regular salad for Bill and Kay and tried to make a dairy-free version for me. It didn't work. It was fine but didn't taste anything like the original. Tough luck for me, I guess.
Taco Salad
There aren't really measurements for this because it depends on what size pan you put it in. Layer the ingredients in the following order starting on the bottom.
Lettuce (usually romaine or iceberg)
Green pepper
Green onion
Tomatoes
1 can kidney beans, drained and rinsed
Creamy garlic salad dressing
Cheddar cheese, shredded
Doritos, taco flavor, crunched up
If you aren't serving it immediately, wait to add the chips or they'll get very soggy.
Kay: I liked this salad. It tasted like tacos and salad. I really liked the chips! This has nothing to do with the salad but I got a new hamster today.
Mom (Dana): If I ever come across a decent dairy free creamy dressing, I'm giving this another shot!

I'm going to have to try this one day. I suppose if you crunch up the tacos then you're not supposed to eat it with your fingers but with a fork?
And I love the random hamster fact! Made me smile.
Dana - while the flavour may be different, I think you'd get a lovely AND creamily textured dressing mixing silken tofu and avocado. You could season it any which-way you liked - I'd add a little lemon or lime juice to keep the avocado green.
Kay - please give your new hamster a huggle from me.
We eat this with a fork although I've seen people leave the chips whole and then scoop up the salad. Kay would probably prefer that because then she'd get more chip and less salad!
The tofu and avocado is a great idea. I'll give it a try.
No hugs for the hamster just yet. We all kind of forgot about the work you have to put in to get them tame and used to you. He's getting better every day though.

Okay, so respectful, gentle stokes to the hamster.
I've even encouraged myself with the avocado and silken tofu thought. A beautiful texture and it would so, so take to a whole asortment of seasoning. And would be safe from Zebbycat's eager food seeking - wrong aroma fro the dear lad.

Did you say summer? We'd hardly noticed with the cold rainy weather we've had! Family was over Saturday and we all wore coats and sweaters! It always comes soon enough though and we'll be wishing for these cooler temps!

We do a similar salad but in individual bowls as a "build-your-own" meal. Our family does eat chicken so I provide grilled and cubed. We also love black olives and some of us(me) enjoy avocados chunked up in it. I don't use salad dressing but salsa and sour cream instead.
I'm betting your husband's version had either Catalina or Russian dressing on it. I've seen lots of home-town and county cookbooks with that ingredient.
Kay, have fun with the hammy! We had three brothers at one time several years ago and they were so cute!! Now we've got guinea pigs.
